Cauliflower Pizza crust

Now that you've made all the bacon recipes and your arteries are clogged, here's something a little lighter.

Cauliflower Pizza Crust

1 Cup riced or food-processed cauliflower
1 egg
1/4C - 1C mozzarella (more cheese tastes better, but recipe works with less if you want it to be lower fat)
1/2t fennel
1t oregano
2t parsley

Preheat oven to 450. Coat a cookie sheet with non-stick spray. Put cauliflower mixture on cookie sheet and pat flat to make it look like a pizza crust. Sprinkle herbs on top.

Bake at 450 for 12- 15 minutes

Remove from oven and top with all your pizza goodies.

Place it in the broiler just long enough to melt the cheese.

Enjoy!

BTW, even my kid that won't eat vegetables likes this!
